Happy first day of cool fall weather to all experiencing the phenomena! I feel reborn and autumnal. I even broke out my fire cider for the occasion— that’ll put hair on your back.
This’ll be brief, but first I just want to say THANK YOU to everyone who had such a lovely and enthusiastic response to the first chapter of my Gilmore Girls fan fiction. Like what?! I had so many lovely notes from you all updating your subscriptions to paid just so you could read it, and from the bottom of my heart I wish you could see how much that means to me.
I know that putting it behind a paywall might feel a little miserly, and I’m not trying to be a Scrooge. I just am putting a lot of my time into this series and while it *is* fulfilling, I also have to pay a sitter most of the time to help carve out time in my life to write these days. So I’m just putting it in my sitter fund. Thank you to everyone helping contribute to that.
Okay, so the main thing I have to share today is THE BEST APPLE CRISP RECIPE YOU’LL EVER HAVE.
This is not my recipe, it’s my dear friend Constance’s who is a pastry chef but doesn’t have an instagram or website or anything. So I had to text her after she brought this apple crisp over this week because I needed to know that I had 24/7 access to this dessert. And I’m sharing it here with you.
Conny’s Apple Crisp
Spiced apples
6-7 Granny Smith apples (peeled and chopped)
2 TSBP sugar
3/4tsp cinnamon
Crisp
1.5 cups brown sugar
1.5 cups AP flour
1.5 cups oats
1/4 tsp salt
1 tsp cinnamon
1 cup cold salted butter cubed
Instructions
1. Preheat oven to 350
2. Butter a 9x13 pan
3. Prepare apples and put in buttered pan
3. Combine brown sugar, AP flour, oats, cinnamon and salt in a bowl then cut in the cold butter cubes with hands until combined and crumbly
3. Top apples with crumble
4. Bake for 40-50 min or until bubbly and golden brown
